Food Studies Curriculum

Learning Outcomes

  1. Discuss how food systems shape human societies, and how food systems are shaped and influenced by individuals, movements, institutions and technologies with local, national, transnational and global dimensions.
  2. Describe the ethical concerns raised about food systems informed by scholarly developments in race theory, sex and gender studies, animal studies, the study of indigenous traditions and by scientific studies of food’s ecological impact. Demonstrate the ability to reason quantitatively about complex processes related to food.
  3. Assess and demonstrate food’s change-making potential to improve and ultimately transform our local, national and global foodways, agricultural systems, food production systems and the values, worldviews, infrastructures and supply chains that undergird them.
