Jeff Middlebrook Director Jeff has spent most of his life in Southern California and has been in the foodservice industry for over 35 years. He graduated from the University of California-Davis and owned his own restaurant for several years. Jeff has been with USD Banquets and Catering since 2000. |
Wally Zoppa In 1973 Wally was a member of the Culinary Institute of America’s first graduating class at Hyde Park, New York. The next twenty years were dedicated to creating fabulous food for heads of state, celebrities, and presidential administrations from Nixon to Clinton. Wally enjoys cold food preparation and designing artistic displays for your special events. |
Laura Beck Orginally from New Jersey, Laura received a degree in Foodservice Management from Johnson & Wales University. She has worked as an executive corporate chef, a private chef, and as the assistant manager for AR Valentien at The Lodge, Torrey Pines. |
Originally from San Diego, Amy attended the University of California-Davis where she obtained BA’s in English and Women and Gender Studies. While going to college, Amy worked for the catering department at UCD as a Student Manager. In 2006, she joined the Banquets and Catering team. |
Laura J. grew up in Colorado, moved to San Diego and graduated from the University of San Diego with a Bachelor's degree in Art. She began working at Banquets and Catering as a student and returned in 2006 as a Unit Leader. |
Richard Clark Richard began his work in foodservice in his family's restaurant and catering business at the age of ten. He went on to be: a chef in the Marine Corp and hotel industry, executive chef for a country club, had his own catering business, and worked as a private chef. Richard has been with Banquets and Catering for over fourteen years. |
