Alumni, students, parents, faculty, staff, friends and community members are invited to join Chell Roberts, Dean of USD's Shiley-Marcos School of Engineering, for a fun, easy cooking demonstration.

Breaded Flash Frying: The Essence of Many Great Dishes

Join Dean Chell Roberts as he demonstrates the art of breaded flash frying techniques. This is a fundamental foundation for eggplant parmesan, chicken parmesan, wienerschnitzel and chicken milanesa. Entertaining commentary will undoubtedly be sprinkled throughout! No cooking experience necessary. Cook along with him or just watch and learn. 
 
Ingredients for Eggplant Parmesan:

1 eggplant – globe type

2 eggs

2 cups breadcrumbs (Progresso Italian recommended)
1 cup flour

3 cups oil (high temp neutral oil is best (grapeseed) – you can mix oils. 

2 cups grated parmesan cheese

2 cups grated mozzarella cheese

3 cups marinara sauce 

1.5 cups fresh basil

Salt

Pepper
